6 cups watermelon - chopped and seeded

1 Tbsp ginger-garlic paste

2 Tbsps fresh mint - chopped

1/2 Tbsp chili flakes - to taste

Olive oil for sautéing
Instructions
Step 1
Sauté the Aromatics
Heat a small amount of olive oil in a saucepan over medium heat.
Add:

Ginger-garlic paste

Chili flakes
Sauté for 1–2 minutes until fragrant. Remove from heat and allow the mixture to cool slightly.
Step 2
Place the following into a blender:

Watermelon

Fresh mint
Blend until smooth and fully pureed.
Step 3
Combine & Simmer
Pour the watermelon mixture into the saucepan with the sautéed ginger-garlic and chili flakes.
Simmer gently over low heat for 10–15 minutes, stirring occasionally, until the soup thickens slightly and the flavors meld together.
Step 4
Season
Add salt and pepper to taste.
Adjust chili flakes if additional heat is desired.
Step 5
Chill the Soup
Transfer the soup to a container and refrigerate for at least 1–2 hours until thoroughly chilled.
